do not overcook. slice into bite-size pieces. then cook further with garlic, chili, fish sauce. add holy basil at the very end.
two eggs. left one was from Ongkharak farm in Nakhorn Nayok (3.8 baht), right one was S-Pure brand from supermarket (almost 9 baht).
left: two S-Pure eggs, right: Ongkharak farm egg. S-Pure ones were more firm. colors were similar. both tasted good.
